Probably it's not an accurate description, but I consider it is music created using typical rock instruments (bass, guitar, battery) but that instead of using the typical rock riffs tries to explore other structures. More often than not is instrumental (or with barely vocals) and sometimes adds some electronic elements to it. I guess it's not a great description as according to it you could argue that Jazz is post-rock... In any case, post-rock overlaps a lot with experimental rock and ambient, and takes some elements from progressive rock. As some times it's easier to put examples than to explain it, I would say that post-rock is what 'Mogwai', 'Sigur Ros' and 'Explosions in the Sky' have in common. And, tipically, post-rock tends to bring me to either a kind of magic and zen place or to a very somber one...
